DIRECTOR OF NEL CENTRO'S WINE PROGRAM ~ Dave Holstrom, aka "Guy du Vin"
David Holstrom has agreed to author and direct the wine program at Nel Centro. David Machado and Dave Holstrom have collaborated on numerous projects since the mid 1990's. They worked together at the Heathman Group where Holstrom created a ground breaking wine list at Southpark Seafood Grill and Wine Bar. Holstrom's list at Nel Centro will be based on the wines of southern France and northern Italy as well as varietals from Oregon and Washington. Holstrom's award winning lists are known for being mischievous, cerebral, and, fairly priced.

David Holstrom has been involved in the wine industry for over 20 years and is wine consultant for the McCormick & Schmick Management Group, Restaurants Unlimited, Lauro Mediterranean Kitchen, Palisade, and Vindalho. He is a frequent contributor to Santé Magazine and has received numerous awards and accolades for his outstanding wine programs including the Monterey Wine Festival, Wine Spectator, Restaurant Hospitality, Food and Wine, Bon Appétit and many more. Paul Hyman's wide and varied career has taken him into some of the most prestigious and innovative kitchens in America. A New Orleans native, Paul was sous chef at the famed Nuvolari’s Restaurante, was chef tournant at Commanders Palace, and, worked with chef Susan Spicer at Bayona in New Orleans. After a decade in New Orleans, Paul headed north, taking the executive chef position at Bonfire Steakhouse in Boston with chef Todd English. Additional highlights from Paul's Boston tour included chef de cuisine stints at Azure and Aquitaine Bis Bistro. Paul is married with three children and lives in Lake Oswego. Welcome Paul!
